Roasted Veggies from Yahoo Food and The Cat Hair Cook.......

The Easiest Way to Make Roasted Veggies

Whenever I come home and am finally #blessed with a homecooked meal, the first thing I demand is my mom’s roasted vegetables. The woman is a saint when it comes to cookin’ veggies. How the does she do it?
When I finally asked what her secret is, I was shocked. It’s the simplest recipe I’ve ever heard.
All you need is olive oil, the seasoning of your choice, and an oven. Done. Oh, and don’t forget the vegetables.
Roasted Veggies
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Servings: 3
Ingredients:
1 head broccoli
1 zucchini
1 sweet potato
1 purple potato
1 bag baby carrots
Olive oil
Salt
Pepper
Directions:
  1. Chop up all the veggies you’re cookin’. #SpoonTip: For the vegetables that cook more slowly, cut them smaller. For the ones that cook more quickly, cut them bigger. Easy, right?
  2. Put all the vegetables back in the bag you got from the grocery store (or any plastic bag of your choice).
  3. Add olive oil to the veggies until they’re lightly coated. Add salt and pepper and other seasonings if you’re feelin’ fancy.
  4. Mix ’em up until all the veggies are evenly coated.
  5. Spread veggies onto a foil-lined baking sheet.
  6. Bake in the oven at 400°F for 30 minutes.

starting early because it takes a long time to cook

planning ahead

saute pan with lid......medium to large.........preferably non-stick




the lid does not necessarily have to fit well but it has to sit correctly or inside of the pan


the steam or condensation that forms goes back onto the pan and not all over the stove


.......................................................


one large sweet potato, yam or two small

cut into approx 1/2 inch slices...it does not have to be exact


cut up or slice one onion

put in one garlic clove....leave whole to remove later or cut up

a spoonful of butter....optional

pour in some olive oil.....a very large spoonful or more

salt and pepper generously

cinnamon, cumin, allspice, nutmeg....optional or just a pinch

some people do not like too much nutmeg....a tiny pinch will be plenty

put the stove on very low


put on the lid

stir initially and during the commercials to keep coating the pan and the sweets with the oil and the spices.

key ingredient.....try to have the television near the kitchen because we know what happens when we try to cook from the front room

after Perry eat lunch or turn off the stove......remove the pan from the burner to a different location.......and eat lunch after the dog park

seriously, this is as simple as cutting up the sweet potatoes, add olive oil and salt and pepper, put on a lid and turn the stove on low and watch perry.




oh, and it is delicious

adjustments may have to be made for a particular stove, pan, lid....sometimes I vent the lid with a spoon,.......and the temp degree for individual stoves for low.

this is basically slow roasted sweet potatoes in olive oil..........



optional.....to remove the peels, they easily fall off at the end of cooking
